The potato is quite complete as a food, it contain carbohydrate in form of starch and glucose. The potatoes are good source of protein. The protein in potato contain all the amino-acids needed by the body. The protein in potato are rich in Lysine and amino acid that is deficient in grains. Potatoes is very rich in vitamin C, although some of this vitamin is lost during the cooking process. They are quite rich in potassium, iron, phosphorus, magnesium, zinc, copper, manganese and other trace elements, potatoes contain about 1.6% soluble.
